Sweet Vegetable Salad

Almost everyone craves sweets. Rather than depending on processed sugar to satisfy cravings, add naturally sweet foods to your daily diet to satisfy your sweet tooth.

Sweet vegetables soothe the internal organs of the body and energize the mind. And because many sweet vegetables are also root vegetables, they are energetically grounding, which helps to balance out the spaciness people often feel after eating other kinds of sweet foods. Adding more sweet vegetables helps to crowd out less healthy foods in the diet.

Enjoy this amazingly healthy and satisfying sweet veggie salad!

Ingredients:

  • 1/2 cup raw sweet corn

  • 1/2 cup raw sweet peas

  • 2 Tbsp red bell pepper

  • 2 Tbsp orange bell pepper

  • 2 Tbsp sweet onion

  • 1/2 clove garlic, minced and with center removed

  • 1 Tbsp hemp seeds

  • Black pepper to taste

  • Sea salt to taste

Method:

Add corn and peas to a large bowl.  Chop peppers and onion, then add to bowl.  Add garlic.  Toss all ingredients together.  Add salt and pepper to taste.  Top with hemp seeds.

Variations:

  • Experiment by using additional raw vegetables, such as zucchini, carrots, tomatoes, etc.

  • Add 1/2 avocado

  • Add 1 Tbsp olive oil

  • Add 1 Tbsp fresh parsley

  • Add a shake of cayenne pepper for a little spice

  • Add chunks of raw sweet potato 

Serves 1. Enjoy!
