Vegetable Soup

Vegetable soup is one of the most popular feel-good, comfort foods around. It has always been an exceptionally favorite dish of mine. This high-raw vegetable soup is only slightly warmed; on cold days it hits the spot just right! 

Equipment Needed:

  • Cutting Board

  • Knife

Ingredients:

  • 2 cups vegetable broth

  • 1 large carrot, chopped

  • 1 zucchini, peeled and chopped

  • ½ cup sweet potato, chopped

  • ¼ sweet onion, chopped

  • 1 clove garlic, minced

  • Sea salt to taste

  • Black pepper to taste

Method:

Heat vegetable broth until just warm. Add vegetables and season to taste. Use more or less broth as desired. Let veggies get just a tad warm, then serve. Though food is considered raw if not heated above 118°F, this recipe is not raw as the vegetable broth has most certainly been heat-treated during processing. Store any leftovers in refrigerator.
