Healthy Spring Greens Salad

It's important to eat fresh, healthy greens with every meal. Even breakfast. Abundant in fruit, this Healthy Spring Greens Salad is particularly energizing and refreshing to have for a morning meal. Also full of nutrients to nourish the skin and the body, let's take a closer look at a few of the star ingredients and their awesome benefits.

Leafy Greens 

High in vitamins A, C & K (essential to bone health) • Rich in minerals • Contain highly absorbable calcium & large amounts of phytochemicals with antioxidant properties • Anti-inflammatory • Help control blood pressure & regulate blood sugar • Help detoxify the body • Low in calories and carbs yet high in fiber • Raw leafy greens are especially high in chlorophyll, which may help reduce the signs of aging.

    Brazil Nuts

    Highest natural source of selenium, which helps prevent coronary artery disease, liver cirrhosis and cancer • High in monounsaturated fatty acids which help lower LDL "bad" cholesterol and raise HDL "good" cholesterol • High in vitamin E • Excellent source of B-Complex vitamins.

    Oranges

    High in vitamin C, which disarms free radicals, prevents cell damage, prevents colds, lowers risk of colon cancer and is vital for a healthy immune system.

    Sprouts

    A nutritional powerhouse, sprouts have been grown for thousands of years in many cultures as a main staple. They are high in protein, vitamins, minerals.

    Pretty impressive for a salad, huh? Now let's get on to the recipe! 

     

    Equipment: Measuring cups & spoons

    Salad Ingredients

    • 2-3 cups organic leafy greens, washed and torn into small pieces
    • 1 naval orange, diced
    • 1/4 cup mung bean sprouts
    • 1/4 cup broccoli sprouts
    • 10 brazil nuts, chopped

    Dressing Ingredients

    • 1/2 cup fresh-squeezed orange juice
    • 1/8 cup avocado oil
    • 2 drops wild orange essential oil (make sure it's pure and high quality)
    • Sea Salt & Pepper to taste (start with 1/8 tsp each)

    Method:

    Add salad ingredients to a large bowl and incorporate well. Set aside. Add dressing ingredients to a small bowl and whisk. Pour over salad and toss. Enjoy! Serves 1.
